the 2 most important things to remember when making a perfect omelet is dont be stingy with the spray, and only use 2 eggs per omelet if your using a normal 8in omelet pan.
i ususaly like to saute my veggies a little so i put them into the pan and get them going, when i have them how i want i give the whole thing some more spray, then pour the eggs in.
another key is as the omelet cooks the outer edges cook first it is a good idea to move the outer edges of the eggs to the center by pushing them in with a spatula.
this allows the the uncooked eggs to be displaced and move into the spot where you have pushed your eggs toward center.
keep doing this until most of the uncooked egg can cook, then its a snap to flip.
after you flip it add your cheese or whatever else you like and fold it in half.
